			<content:encoded><![CDATA[<p>Grilling on the barbecue has never been more exciting. Not only do barbecues come in a myriad of designs and options, but also with the advent of popular cooking shows, cooking books and magazines&#8217;, grilling has reached a whole new dimension. Grilling is no longer just about steaks and burgers, barbecue grilling is full of adventurous and elegant recipes and menu plans. Some of the tantalizing grilling &#8216;recipes have names like grilled mango blossom, grilled portobello&#8217;s with avocado salsa and grilled beef tenderloin with cabernet sauvignon sauce.</p>
<p>You&#8217;ll want to familiarize yourself with the barbecuing grilling basics before you start. The two most popular types of grilling are the indirect and direct grilling methods. The indirect method is a slow cooking process because less heat is used. One suggestion for indirect cooking is to use a disposable drip pan or foil placed underneath the food to be cooked, using tongs arrange the coals around the pan. The food is cooked by the hot air circulating around the food (similar to a convection oven) this process is great for cooking roasts. It&#8217;s always a good idea to check with your owner manual for your specific barbeque.</p>
<p>The direct grilling method is achieved by arranging the coals (with long handled tongs) to spread evenly in a single layer, extending about one inch beyond the area of food. The food is then placed directly over fire. The direct grilling method is fast because of the intense heat and allows for quick browning on the outside of foods. Direct grilling works best for food requiring short cooking times, such as burgers and steaks. It&#8217;s important to turn over food to allow cooking of both sides.</p>
<p>The three most popular ways of adding flavor to your selected grilling foods are with sauces, marinades and rubs. The sauce can be said to define a great barbecue, you can use a little sauce or a lot. A sample recipe for sauce is this maple barbecue sauce; combine equal amounts of maple syrup, ketchup and white wine add garlic, salt, pepper, thyme, basil, ginger and chili powder with a bay leaf, bring ingredients to a boil then reduce and let simmer. A sauce should be brushed on in the last five to ten minutes of grilling as the sugar can cause the sauce to burn. There are a wide variety of barbecue sauces and recipes available.</p>
<p>Marinades are another way to change a mediocre meal into incredible. They are an excellent way to add flavor while tenderizing and promoting crisp brown exteriors. The three basic ingredients in marinades are flavorings (herbs, spices and sweeteners), oils and acids (citrus juices, wines, vinegars and yogurts). A simple marinade recipe is the lemon rosemary marinade. Mix shredded lemon peel, lemon juice, olive oil, sugar, white wine, rosemary, salt and pepper and pour over your selected meat, tofu, or vegetables in either a plastic sealable bag or shallow dish and refrigerate for one to two hours, remembering to shake bag or flip in dish half way through marinating process.</p>
<p>Rubs are a wonderful bold blend of seasonings, which are just as the name implies rubbed directly into the food. The food is rubbed with spices prior to grilling, transforming the rub into a crunchy brown crust that seals in the juices and enhances the flavors. A very basic rub recipe is this herb rub; equal amounts of dried rosemary, dried thyme, dried minced onion, dried minced garlic, with smaller amounts of salt and pepper combine all ingredients in a food processor until coarsely ground. Sprinkle mixture evenly over meat, then rub in with fingers. Store in a covered container in the refrigerator for 15 minutes to two hours, and then grill.</p>
<p>When outdoor grilling there are a few simple things to remember in order to avoid any contamination of food. Any marinated food should be kept in the refrigerator (not on the counter) to prevent giving bacteria a chance to grow. Set some marinade aside at the beginning, and never reuse any marinade that has been used on raw meat. Always keep vegetable and fruits separate from raw meat; utensils and plates should also be washed before using. Be sure to properly cook all meats. Serve food immediately, so hot foods don&#8217;t have too much time to cool and to start growing bacteria. Perishable foods should not be left out of the refrigerator for more than two hours, and if the outdoor temperature is more than 85 degrees or hotter serve within an hour.</p>
<p>Grilling vegetable is an excellent way to bring out seasonal flavors. Vegetables and fruits such as; eggplant, bell peppers, summer squashes, sweet onions, roma or cherry tomatoes, mushrooms, mangoes, pineapple or peaches are all excellent choices for grilling. Cut vegetables into half inch slices or large chunks. Brush with some olive oil (may be seasoned with garlic or other selected herbs). Grill the vegetables until tender, turning only once. Fruit should be halved with pits removed, and grilled until tender (no oil is needed), with the pulp side down. Vegetable cooking sprays or small amounts of oil will prevent the vegetables from sticking (avoid spraying vegetable near lighted grill). Marinating the vegetable beforehand also makes the vegetables easier to handle and less likely to stick to your grill surface.</p>
<p>Grilling corn on the cob cooked in the cornhusks (without the corn silk) is a unique and tasty alternative to boiled corn. Peel back cornhusks and put butter and herbs around the corn. Fold over cornhusks and tie with kitchen string. Grill the corn for approximately thirty minutes, remembering to turn the corn about three times.</p>
<p>A simple and elegant meal might consist of a grilled pizza and some grilled fruit crisp for dessert. To grill a pizza use a store bought Italian bread shell cover with pesto, thinly sliced plum tomatoes, yellow tomatoes, kalamata olives and basil (drizzling olive oil over top). Use tin foil folded in half placing the pizza on top folding up the edges of tin foil up to the edges of the pizza. Using the indirect method of grilling, grill the pizza for about 10 minutes. For the grilled fruit crisp dessert, mix peaches, pineapple tidbits and brown sugar spooning into a metal baking foil pan. Then combine larger amounts of brown sugar, flour and butter with a touch of cinnamon and nutmeg sprinkling over top of fruit mixture. Grill about fifty minutes (indirect grilling method) or until hot and bubbly, serve with ice cream if desired.</p>
<p>Outdoor grilling is a convenient and nice alternative to cooking indoors. The options of menus are limitless. Grilling is one of the easiest and most tantalizing low fat ways of cooking. Whether you stick to the time honored steak and burgers or go for something a bit more adventurous, grilling is always a tasty and enjoyable way to be outdoors with family and friends.</p>

<p>1. Pick up your packaged and canned foods first. Buy cans and jars that look perfect. Don&#8217;t buy canned goods that are dented, cracked or bulging. These are the warning signs that dangerous bacteria may be growing in the can.</p>
<p>2. Look for any expiration dates on the labels and never buy outdated food. Likewise, check the &#8220;use by&#8221; or &#8220;sell by&#8221; date on dairy products such as cottage cheese, cream cheese, yogurt, and sour cream and pick the ones that will stay fresh longest in your refrigerator.</p>
<p>3. Check eggs, too. Choose eggs that are refrigerated in the store. Before putting them in your cart, open the carton and make sure that the eggs are clean and none are cracked or broken.</p>
<p>4. Raw meat, poultry, and seafood sometimes drip. The juices that drip may have germs. Keep these juices away from other foods. Put raw meat, poultry, and seafood into plastic bags before they go into the cart. Separate raw meat, poultry, and seafood from other foods in your grocery shopping cart and in your refrigerator.</p>
<p>5. Don&#8217;t buy frozen seafood if the packages are open, torn or crushed on the edges. Avoid packages that are above the frost line in the store&#8217;s freezer. If the package cover is transparent, look for signs of frost or ice crystals. This could mean that the fish has either been stored for a long time or thawed and re-frozen.</p>
<p>6. Check for cleanliness at the meat or fish counter and the salad bar. For instance, cooked shrimp lying on the same bed of ice as raw fish could become contaminated.</p>
<p>7. When shopping for shellfish, buy from markets that get their supplies from state-approved sources; stay clear of vendors who sell shellfish from roadside stands or the back of a truck. And if you&#8217;re planning to harvest your own shellfish, heed posted warnings about the water&#8217;s safety.</p>
<p>8. Pick up milk, frozen foods, and perishables (meat, poultry, fish) last. Always put these products in separate plastic bags so that drippings don&#8217;t contaminate other foods in your shopping cart.</p>
<p>9. Drive immediately home from the grocery store. This will give cold or frozen food less time to warm up before you get home. If the destination is farther away than 30 minutes, bring a cooler with ice or commercial freezing gels from home and place perishables in it.</p>
<p>10. Save hot chicken and other hot foods for last, too. This will give them less time to cool off before you get home.</p>

<p>When cooking, be aware that flax seed can be used instead of the oil and shortening called for in a recipe. When substituting flax seed in a recipe, use a three to one ratio.</p>
<p>For example, if a recipe asks for one-third of a tablespoon of oil, use one tablespoon of flax seed. Flax seed is also very easy to store. Unlike seeds from other plants, flax seed can be stored for up to a year.</p>

<p>Thermocouple:</p>
<p>Of all food thermometers, thermocouple thermometers reach and display the final temperature the fastest &#8211; within 2 to 5 seconds. The temperature is indicated on a digital display. A thermocouple measures temperature at the junction of two fine wires located in the tip of the probe. Thermocouples used in scientific laboratories have very thin probes, similar to hypodermic needles, while others may have a thickness of 1/ 16 of an inch. Since thermocouple thermometers respond so rapidly, the temperature can be quickly checked in a number of locations to ensure that the food is thoroughly cooked. This is especially useful for cooking large foods, such as roasts or turkeys, when checking the temperature in more than one place is advised. The thin probe of the thermocouple also enables it to accurately read the temperature of thin foods such as hamburger patties, pork chops, and chicken breasts. Thermocouples are not designed to remain in the food while it&#8217;s cooking. They should be used near the end of the estimated cooking time to check for final cooking temperatures. To prevent overcooking, check the temperature before the food is expected to finish cooking. Thermocouples can be calibrated for accuracy.</p>
<p>Thermistors:</p>
<p>Thermistor-style food thermometers use a resistor (a ceramic semiconductor bonded in the tip with temperature-sensitive epoxy) to measure temperature. The thickness of the probe is approximately 1/ 8 of an inch and takes roughly 10 seconds to register the temperature on the digital display. Since the semiconductor is in the tip, thermistors can measure temperature in thin foods, as well as thick foods. Because the center of a food is usually cooler than the outer surface, place the tip in the center of the thickest part of the food. Thermistors are not designed to remain in the food while it&#8217;s cooking. They should be used near the end of the estimated cooking time to check for final cooking temperatures. To prevent overcooking, check the temperature before the food is expected to finish cooking. Not all thermistors can be calibrated. Check the manufacturer&#8217;s instructions.</p>
<p>Oven Cord Thermometers:</p>
<p>This food thermometer allows the cook to check the temperature of food in the oven without opening the oven door. A base unit with a digital screen is attached to a thermistor-type food thermometer probe by a long metal cord. The probe is inserted into the food, and the cord extends from the oven to the base unit. The base can be placed on the counter or attached to the stovetop or oven door by a magnet. The thermometer is programmed for the desired temperature and beeps when it is reached. While designed for use in ovens, these thermometers can also be used to check foods cooking on the stove. Oven cord thermometers cannot be calibrated.</p>
<p>Thermometer Fork Combination:</p>
<p>This utensil combines a cooking fork with a food thermometer. A temperature-sensing device is embedded in one of the tines of the fork. There are several different brands and styles of thermometer forks on the market; some using thermocouples and some using thermistors. The food temperature is indicated on a digital display or by indicator lights on the handle within 2 to 10 seconds (depending on the type). These lights will tell if the food has reached rare, medium, well done, etc. Particularly useful for grilling, the thermometer fork will accurately measure the internal temperature of even the thinnest foods. The thermometer fork should be used to check the temperature of a food towards the end of the estimated cooking time. Thermometer forks are not designed remain in a food while in the oven or on the grill. Thermometer forks cannot be calibrated.</p>

			<content:encoded><![CDATA[<p>Bad eggs are rare but they do occur. Crack eggs into a separate bowl before mixing with other ingredients. If the egg is bad it will have an unmistakeable odor.</p>
<p>If you find an egg stuck to the carton, fill the indentation with cool water and let sit for five minutes. The water will soften the dried egg white that is holding the egg in the carton.</p>
<p>Many techniques are used for cracking open an egg. Their is an easy method you can use if you want to keep the eggshell out of the frypan. Using the following method will keep the egg shell from shattering when you crack the egg.</p>
<p>1. First, find a flat surface, you want to crack the egg on a flat surface and not on the edge of counter or frying pan.</p>
<p>2. Place the egg in the upper part of your palm, between your thumb and first three fingers. Leave a space between your middle and ring finger. Give a short, sharp crack to the exposed area on a flat surface.</p>
<p>3. Once the egg is cracked, quickly bring the egg over the bowl or pan and quickly spread apart the two halves of the shell. Pull the lower half down with your ring finger, while pushing up the upper half with your thumb and middle finger. The egg will gently fall into the bowl as the shell spreads apart.</p>
<p>If you drop an egg on the floor, pour salt on the floor, heavily. Wipe it up fifteen minutes later. Salt will set up the eggs protein so that it&#8217;s easier to clean up.</p>
<p>If you have to clean up a mixing bowl that has eggs coated on them, use warm water. Hot water may set up the egg&#8217;s protein and make it harder to wipe off the bowl.</p>

			<content:encoded><![CDATA[<p>Simply because herbs are plentiful this time of yr, why not use them to make a variety of simple herb butters? You can even freeze the butters to enjoy in the cooler fall months ahead.</p>
<p>Use these tasty butters on every factor from grilled steaks, fish, and chicken, to cooked veggies. And don&#8217;t neglect to slather some on a large chunk of fresh bread.</p>
<p>To make herb butters, chop the herbs very great (and pulverize the seeds). Cream the butter. Then mix in the herbs and seasonings. Roll the herb butter into a log, then wrap the log in waxed paper. Store in the fridge, or location in the freezer (for up to 6 months).</p>
<p>Try the following herb butter combinations:</p>
<p>Basic HERBAL BUTTER</p>
<p>2 sticks softened butter</p>
<p>1 Tsp. chopped, fresh green basil</p>
<p>1 Tbsp. chopped, fresh marjoram</p>
<p>1 Tbsp. chopped, fresh chives</p>
<p>1 tspo. chopped, fresh rosemary</p>
<p>1 tsp. fresh lemon juice</p>
<p>PARSLEY HERB BUTTER</p>
<p>1/2 c. softened butter</p>
<p>1 clove garlic, crushed</p>
<p>2 Tbsp. chopped fresh parsley</p>
<p>1 tsp. lemon juice</p>
<p>1/4 tsp. chopped basil</p>
<p>1/4 tsp. oregano</p>
<p>Pepper to taste</p>
<p>ROSEMARY BUTTER</p>
<p>2 Tbsp. chopped fresh rosemary leaves</p>
<p>1 Tbsp. chopped fresh parsley</p>
<p>1 tsp. lemon juice</p>
<p>2 sticks softened butter</p>
<p>Variation: To make pretty pats of these butters, spoon softened herb butter into candy molds and freeze. When the butter is frozen, pop it out of the molds. Store the butter pats in the fridge.</p>
